Hello friends! It’s Thursday which means it’s almost the weekend! It’s sunny and about 80° outside right now and I am dying to sit outside and soak in some sun but I can’t. I’ll be inside working today. Luckily, this weekend, I will be able to and I’m super excited for that. I plan on spending all of Saturday outdoors, hopefully getting in some paddle boarding or kayaking on the river. At night, I’m going to a party at Anton’s cousins house. Last year, he had a similar party and everyone slept in tents outside in between fairy lights, bonfires, and beer pong. It was surprisingly really fun, even for someone who doesn’t love to camp (aka me).
Last weekend, I whipped up these lemon turmeric balls. Lemon and turmeric are so good for you in so many ways- they are anti-inflammatory, a great boost of antioxidants, and help to detox your body, boosting your nutrients and fighting of sickness. The two are even said to have helped depression, cancer, and heart conditions. So, I call that a huge WIN!
These are perfect snacks to fill you up and help you enjoy something tasty along with a smoothie, yogurt, or your mid-morning tea. I love anything that is a quick boost for my metabolism and keeps me healthy. Don’t you? What are your latest food obsessions? I’ve been making energy balls a lot on here lately but mostly because they’re usually packed with clean, raw ingredients and there’s no bake time (yessss)! But I’m always interested to see what other healthy foodies are eating too! Lemme know 😉
Recipe:
- 1 tsp lemon zest
- 12 dates, pitted
- 1 c rolled oats
- 4 tbsp lemon juice
- 1 heaping tsp turmeric
- 1 tsp vanilla extract
- 1/2 cup shredded almonds
- 1 tbsp chia seeds
- 1/2 cup of coconut granola (I got mine at Trader Joes)
Enjoy!! And if you do make them yourself, tag me in any photos! I’d love to see
